Casey Pace is only a few weeks away from launching her new business, “Canteen Coffee” – and tee, cider, donuts, sandwiches, and baked goods. She used a van this time at a nearby event. She is trying out different things, and Grace comes along.
Casey plans to set up in the middle of Cambridge once her horse wagon is finished being re-vamped and re-imagined. It’s exciting following Casey as she experiments, researches, and networks. I am eager to get my tea, cider, and decaf coffee from here. She planning to sell sandwiches.
Casey is part of a food revolution sparked by young farmers, coffee makers, and millennials who want to do something other than an enslaved person for people who usually care nothing about them. She is smart, looking for ways to save money and still be with her daughters every night.
I admire people who follow their dreams, and I respect women who find a way to keep working and still be with their children. It isn’t easy, but Casey has made it a priority.
I asked her to keep me posted, and she is. “Canteen Coffee” is a dream of Casey’s; she’s worked in the food realm almost all of her adult life. She knows what she is doing and shows a lot of skill and imagination in figuring out how to do it. Stay tuned, the Horse Wagon is almost done. She’s got a newborn baby at home, but her dream is to have her own business in the daytime and be home at night with her two children.
From what I’ve seen of Casey, she’ll get what she wants.
