I’ll Leave You With Green Flowers From One My Lisianthus Plants (OK, And One Art Flower) Zucchini Pancakes Tonight

I was supposed to spend the afternoon reading, but the blog lured me into my office. There are just too many good things going on in my life.

I’m tired, and Maria and I will try something new tonight – Zucchini pancakes.

Maria found a big zucchini in her vegetable garden, and we’ve tracked down a simple Zucchini pancake recipe with eggs and herbs. We’re using duck eggs tonight; Cyndy Cazarez gave them to us at the Farmer’s Market. Wish me luck. We both vaguely remember making these pancakes before.

Anyway, I’m signing off; I gassed off enough today. It was a beautiful, productive, and peaceful today. I enjoyed it very much. So did Maria. It started with seeing our friend Ninah at Jean’s Diner. I had an egg sandwich on wheat toast with crispy home friends. That is becoming my favorite Sunday breakfast.

 

I worked most of today. A note: The blog will be down for routine maintenance from 3 p.m. to dusk on Monday. FYI.

The purple and white colors drew my attention and held my eye. That’s how I choose the photos I take. They need to catch my eye.

      1. Sounds yummy! I tried a recipe for a Zucchini ‘Apple’ Crisp…and it was amazing. You’d never know there were no apples in it, and it used up two big zukes!
