The Food Revolution Here Continues, Work Day And Night. A Calling, Not A Job

by Jon Katz

The young people’s food revolution continues in our county.

Last night, we were walking to a restaurant on Main Street in nearby Greenwich to meet some friends, and we looked up to see our friends Ashley and Gordon working well into the night to renovate the building that will be the new home of their coffee/sandwich/bakery, and takeout restaurant.

Ashley was hanging their new flag.

There is something about seeing younger people take the risk of creativity and individuality to build something new and work hard for it. They are in their new restaurant day and night, seven days a week, to make their dream a reality. I have a good feeling about it.

They launched “Coffee and…” baked goods, cookies, bagels, rolls, and pies -at our Farmer’s Market and were a big hit, so they took the leap of faith and rented a coffee shop that failed. The two of them, almost all by themselves, are renovating the space, including the walls, floors, ceilings, and plumbing.

They hope to open by Christmas and have new ideas about how food service like theirs can be inexpensive and different and avoid the costs and pitfalls of so many restaurants. Their block has seen some hard times, but their idea is different.

They’ve done a lot of hard work and hard thinking.

Ashley and Gorgon are the younger people who fled our town and the family life to live in Burlington, Vt. After the pandemic, they came home and stayed home.

They have their life plans; this is a calling for them, not a job.

There is an energy for the young and a willingness to take some risks that is not always present in older people, who get weary, beat up, and tired. Seeing Ashley, who was raised on a nearby farm and left for a few years, is inspiring to mung people who have staged a food revolution around her; it’s exciting to see; I’ll follow it as best I can.
