Dinner: The Cauliflower Pizza WIth Pear Snap Peas, Two Cheeses

by Jon Katz

Tonight, I made us a cauliflower pizza, a healthy, tasty, and crisp pizza in my new food world.

Cauliflower pizza is gluten-free, a simple blend of cauliflower, eggs, cheese, and a few spices flatted or baked into a golden crust.

It can be frozen or topped off with the ingredients of your choosing

I made mine with sliced pear, snap peas, and light servings of two healthy cheeses – Mozzarella and low-fat Feta cheese.

I cooked it at 450 degrees for nine minutes.

To have a really crisp crust, I cook it a bit longer, 10 to 12 minutes (but you have to wash it to make sure it doesn’t turn the crusted black.)

I liked the slightly softer crust at the lower time.

Yet another new food that is healthy and tastes good. Servings are two slices each.

  1. Really interesting. I have not thought to add fruit to pizza. Occasionally, when desperate for a snack, I gnaw on a chunk of good Parmesan = very satisfying.

  2. that looks divine, Jon. Flavor galore! And……must be a smallish crust if 2 slices each is the result…….perhaps 10 inch crust? I do recall well, though…… when we were on the Zone diet………. it’s not only *what* you eat, it’s *how much* you eat……and ultimately…… most people (myself included sometimes) tend to overeat. The body does not require much volume…it merely needs the appropriate nutritional sustenance. I am so glad that you are both embracing this…….and I can only imagine how much better you feel. A perfect reward! I am inspired daily by your journey!
