We are still negotiating terms, but Scott Carrino has hired me to work with him on Sunday preparing wood-fired pizzas at the Cambridge Farmer’s Market. One of my first jobs was twirling pizzas in an Atlantic City pizza place frequented by members of the Philadelphia mob. The boss put great pressure on us to make the pizza perfectly, he didn’t want any unhappy customers.
Scott sets up in front of a wood-fired oven near the farmer’s market and orders are relayed by cell phone, walkie-talkie and human messengers. I’m going to help prepared the dough and the pizzas, get them in and out of the oven. We’ll see how it goes. Red is coming along. Could be a new career for me, I used to be pretty good at it. I’ll be at the Farmer’s Market at 10 a.m.
