Sapping is not a simple thing, Scott had to fire up the stove to get the steaming vats to 219 degrees, the sap dripped down into the vats and moved from pan to pan, Scott was in constant motion adjusting the flow of sap, checking the temperature, sticking more wood into the fire. Because it was cold, he didn’t draw any more sap from the trees, the sap doesn’t run below freezing he said.
