Before the judging, each cow is led to Eric, a veteran trimmer, for what Ed calls “a bit of a polish.” The cows are meticulously groomed, scrubbed and trimmed so that their appearance is even, and the affect is to show them well-tended. Early in the morning, Nick and Tom take them into the cow wash for a thorough bath and scrubbing. This goes on all day.
